Black Beans, drained and rinsed

Green Onions/Scallions
1/2 cup
Mint or Cilantro, finely chopped
2 tsp
Ginger, grated
1 clove
Garlic, grated
1
Lime, juice and/or zest
1
Orange, juice and/or zest
2 tbsp
Olive Oil
1/4 cup
Feta (optional)
1/2 tsp
Sea Salt

Cooking Directions
Over the BBQ grill or cast iron grill pan, grill scallions until lightly blacked on the outside.
Roughly chop the scallions and add to a bowl with black beans and mint/cilantro.
For the dressing use a jar and combine ginger, garlic, olive oil, salt, lime and orange juice and zest. If you don’t want to add the juice, just add the zest and a couple tablespoons of water.
Add dressing to your ingredients and mix well. Top with feta.
