Ingredients

4 cupsWhole Grain Bread (day old bread works best), roughly torn or chopped
2 cupFrozen Blueberries
2 cupsMilk or Milk Alternative
3 eachEggs
1 tspGround Cinnamon
1Ripe Banana
(optional)Dark Chocolate pieces


Directions

  1. Preheat the oven to 350 degrees F.
  2. Put bread and blueberries into a large bowl.
  3. Add milk, eggs, banana and cinnamon to a blender. Blend until smooth. (optional) Add a little maple syrup or honey if you want it sweeter.
  4. Pour custard mixture over your bread. Toss to coat well.
  5. Pour mixture into a prepared baking dish or skillet. (tip: line your baking dish with parchment saves you some cleaning time.)
  6. (optional) Top with some dark chocolate pieces.
  7. Bake for about 45 minutes or until golden brown ontop and set.

Nutrition

  • ​​Make the fibre switch. Using whole grain bread instead of white, adds 2 grams of fibre per slice. Try to make at least half of your grain choices for the day whole grains. Whole grains in our diet can help reduce the risk of several cancers including colorectal cancer. 
  • It’s no yolk, whole eggs are healthy! One whole egg provides 6 ½ grams of good quality protein and several key nutrients like vitamin D, iron, and lutein. Don’t fear the yolk! The cholesterol in the yolk has little effect on the cholesterol in the blood.  
  • Keep it colourful! The colour of the fruit and vegetable are clues to the helpful plant compounds they contain. This recipe calls for blueberries which are rich in fibre and nutrients that may reduce cancer risk and improve brain, eye, and heart health.
