1 bunch (about 12-15 spears)
Asparagus, 1 inch trimmed oof the bottom
1 tbsp
Lemon Zest
1/4 cup
Breadcrumbs
1/4 cup
Slivered Almonds
2 tbsp
Olive Oil
Lemon Tofu Dressing
1 cup
Silken Tofu
1 each
Lemon, juice
2 tbsp
Chives (or use Tarragon/Dill/Parsley)
To Taste
Sea Salt and Ground Black Pepper
Directions
Cooking Directions
In a saute pan over medium heat, toast breadcrumbs and almonds in 1 tbsp of olive oil, until golden brown. Add in lemon zest. Set aside.
Add all your dressing ingredients to a blender and blend until smooth but still runny. Add a little water if needed to thin out.
Trim about an inch off the bottom of your asparagus.
Sear in a pan or grill over medium heat, turning occasionally for about 6 minutes, tender but still crisp. Dress them with a little oil and season with salt and pepper.
Serve asparagus on a plate topped with your dressing. Sprinkle your breadcrumb almond mixture over top.
