Whole Grain Bread, torn into small pieces

Eggs
1 cup
Milk (Use Cream for more calories, or skim for a lighter version)
2 cups
Greens (spinach, chard or kale will work)
1 cup
Cheese (use your favorite – cheddar, goat, feta etc.)
1/2 cup
Fresh Herbs (or 1 tbsp dried, i.e. basil, mint, oregano...)
1/2 tsp
Sea Salt and Ground Black Pepper

Cooking Directions
Preheat the oven to 375 degrees F.
Whisk the eggs in a large bowl, whisk in milk. Season with salt, pepper and herbs.
Tear in pieces of whole grain bread, toss to coat.
Pour into a baking dish lined with parchment paper.
Tear in greens, and top with cheese.
Bake for about 20 to 25 minutes or until the eggs are set in the middle and not runny.
