Cooked Rice (any rice will work, try a whole grain rice like brown jasmine rice)

Garlic Cloves, minced

Ginger, minced

Red Thai Chili, thinly sliced (optional)

Fava Beans or Green Peas

Cabbage, shredded (any type of cabbage)

Swiss Chard Leaves, stems removed and finley chopped

Eggs, whisked (optional)

Grape Seed Oil
1/2 tsp
Sea Salt & Freshly Ground Black Pepper
Citrus Dressing

Low Sodium Soy Sauce

Lime, juice and zest

Mandarin, juice and zest

Sesame Oil

Cilantro, finely chopped

Cooking Directions
Combine ingredients for the dressing and set aside.
Wrap Swiss chard leaves in some damp parchment paper and either microwave for 45 seconds or place in a 350 degree oven for 5 minutes. Set aside.
Place a large sauté pan over medium heat.
Add grape seed oil. Once it begins to shimmer, add your garlic, ginger, green onion and chili. Stir constantly and cook for about 1 minute. Add the cabbage, chard stems and fava beans.
Stir well and cook for another 2 minutes. Add the rice and stir through.
Add half the dressing and stir well. Make some room on one side of the pan and pour in the egg. Cook for 30 seconds and then mix through.
Season to taste, remove from heat and allow to cool slightly.
Place about a ¼ cup of the stir fried rice in the middle of each swiss chard leaf, tuck in the sides and roll until sealed.
Serve with the remaining dressing as a dipping sauce.
