Ingredients

Roll Dough Ingredients
3/4 cupWarm Milk or Warm Water
2 1/2 tspDry Active Yeast
1 tbspHoney
2 cupsWhole Grain Flour (Spelt or Red Fife) or All Purposed Flour
1/2 cupGround Whole Grains/Seeds/Nuts
1/2 cupOlive Oil
1Egg
1/2 tspSalt
Filling Ingredients
4Eggs, lightly beaten
1/2 cupSundried Tomatoes, roughly chopped
1/2Bell Pepper, small dice
1/4 cupBasil (any herb), finely chopped
1/2 cupRed Onion, finely chopped
2 cupsSpinach, roughly chopped
1/4 cupParmesan Cheese, grated
1/2 tbspExtra Virgin Olive Oil
1/4 tspSea Salt and Freshly Ground Black Pepper

Directions

  1. Preheat the oven to 350 degrees F.
  2. Add yeast and honey to warm milk and gently stir.
  3. Combine in a mixer, or in a larger bowl, with 1 cup of flour, olive oil, egg and salt. Mix until well combined.
  4. As you continue to mix, slowly add in remaining flour and the ground whole grains. Continue to mix until a soft ball forms.
  5. Place dough ball on a floured surface and knead for about 2 minutes. Form a ball cover with a clean dish towel and let it rise for 30 minutes.
  6. On a floured surface, roll dough out until it’s about ½ inch thick. Spread all your filling ingredients, except the eggs, across the dough. Roll it up tight into a log and slice about 2 inch wide rounds.
  7. Place rounds into a greased pan or muffin tins.
  8. Pour the beaten eggs over top, into the cracks of each roll.
  9. Bake for about 20 to 25 minutes.
  10. Refrigerate remaining for up to 4 days or freeze for up to 2 months.
