Ingredients

8 to 10Eggs
1 cupSweet Potato, cooked
1/2 cupSharp Cheddar, grated
1/2 cupPlain Yogurt
2 tbspAny Herbs (Rosemary/Oregano/Thyme etc.)
1 tbspOlive Oil
1/2 tspSea Salt & Black Pepper

Directions

  1. Preheat the oven to 375 F.
  2. Whisk eggs with yogurt, and season. In a skillet over medium high heat, add oil, once hot, add egg mixture and use a spatula to gently stir through the eggs until curds start to form.
  3. Sprinkle in the rest of your toppings
  4. Bake for about 15 - 20 minutes or until the middles is set and golden brown on top.
  5. To store for later, chill in the fridge for about 1 hour. Then slice into small squares, place on a baking sheet and freeze until solid. Wrap individually in parchment and freeze in a freezer bag. Enjoy as you need, toast up in the oven or microwave.
  6. Leftovers in the fridge should be consumed within 2 – 3 days, or freeze the rest for later use.
