Turkey Thighs (bone-in, skinless)

Turkey Matzo Balls

Matzo Crumbs or use Bread Crumbs

Fresh Dill or Fennel Tops, finely chopped

Cooked Turkey Meat
1/2 tsp
Sea Salt & Ground Black Pepper
Directions
Cooking Directions
Add all the broth ingredients to a large stock pot over high heat. Cover with water, bring to a boil and reduce the heat to medium low and simmer for 1 hour.
Remove the turkey thighs to cool and let the broth continue to simmer.
Shred the meat off the bone, reserve 1 cup for the matzo balls and refrigerate the rest.
Either by hand or with a food processor, roughly chop up 1 cup of the cooked turkey. Add remaining ingredients and combine well.
Take the mixture and roll into large meatballs and gently add to the simmering broth. Allow to simmer for another 20 minutes.
Serve up some of the broth with a turkey matzo ball and some extra shredded turkey.
