Fresh Shiitake Mushrooms, stems removed, sliced

Kale or Cabbage
2 cloves
Garlic, thinly sliced

Chili Flakes

Directions
Cooking Directions
Add turkey to a pot, cover with cold water (about 2 Litres). Add carrots, onion and dried mushroom. Bring to a boil, then reduce heat and simmer uncovered for about 3 hours. Add more water as you need to keep turkey covered.
Remove the turkey, let cool, and then shred into pieces. Strain remaining stock and reserve.
In a large pot over medium heat, add olive oil, garlic and chili flakes. Saute for about 1 minute. Add mushrooms and saute another 2 minutes.
Add kale about 1 cup of shredded turkey meat and about 6 cups of turkey stock. Bring up to a boil and remove from the heat. Add lemon juice and season to taste.
