Ingredients

1 1/4 cupsBuckwheat Flour
2Eggs
1/4 tspSea Salt
1 tbspOlive Oil
2 cupsMilk (or Milk Alternative)
1 tbspBaking Powder
5Prune Plums (or any stone fruit), halved and pitted
1 tbsp + 1 tbspHoney
1/2 tsp eachGround Ginger, Cinnamon, Cardamom, Nutmeg
1/2 cupKefir Yogurt

Directions

  1. Preheat the oven to 350 degrees F.
  2. Combine plums with spices and 1 tbsp honey and mix well. Place on a baking tray and into the oven. Bake for 20 minutes.
  3. Mix buckwheat flour with sea salt and baking powder in one bowl. Mix eggs, olive oil and milk in another bowl. Stir dry ingredients into wet, mix well. Refrigerate batter until ready to use.
  4. Place a medium non-stick or cast iron pan over medium high heat. Pour about a ¼ cup of batter in the pan and spread it around so that it covers the entire surface.
  5. Cook for about 90 seconds until you see small bubbles start to form and the edges turn golden brown. Use a thin spatula to gently lift an edge of the crepe and carefully use your hands to lift it out and flip. Cook the other side for about 30 seconds and remove. Use the rest of the batter to make more crepes. Fill with roasted plums, a spoonful of yogurt and a small drizzle of honey.

It also contains some prebiotics - carbohydrates that act as food for the good bacteria, helping them grow and survive in our digestive system. Having a healthy balance of bacteria in the gut helps boost the immune system, promotes healthy digestion and may help to prevent and manage irritable bowel syndrome and reduce the risk of colorectal cancer.
