Spelt Flour (use Quinoa Flour for a gluten-free variation)
1 tsp
Baking Soda
2 tsp
Baking Powder
2
Eggs
1 1/2 cups
Apple Sauce
1 1/2 cups
Carrot (purple, red, yellow, orange), grated
1/2 cup
Honey
1 tsp
Cinnamon, ground
1/2 tsp
Nutmeg
1 tsp
Orange Zest
Directions
Cooking Directions
Preheat the oven to 400 degrees F.
In a large bowl, combine apple sauce and honey. Beat in eggs and grated carrot.
In a separate bowl, combine flour, baking soda, baking powder, orange zest, cinnamon and nutmeg.
Blend the dry ingredients into the wet mixture. Mix until evenly blended.
Pour the mixture into greased muffin tins. Bake on middle rack of oven until a fork inserted into the middle of a muffin comes out clean, about 25 minutes.
Remove from the oven and allow to cool for 5 minutes. Remove from tins with a spoon and serve.
