| 1/2 cup | Fresh Parsley,finely chopped |

| 1 tsp | Ground Cumin (optional) |

| 1/4 cup + 1/4 cup + 1/2 cup | Mushroom Ketchup (see below) or Regular Ketchup |

Mushroom Ketchup (makes about 1 cup)

| 1 cup | Cremini or White Button Mushrooms,roughly chopped |

| 2 tbsp | Dried Porcini or Shiitake Mushrooms (soak in 1 cup of hot water) |
