1Avocado, halved, pit removed
1 can (about 2 cups)Chickpeas, rinsed and drained
1 tspGround Cumin
1 cupCilantro or Parsley
2 tbsp Lemon juice with 2 tsp zest
½ cupBread Crumbs (or large flaked oats)
½ Small Green Chili or 1 tbsp Harissa Paste (optional)
1 ½ tbspExtra Virgin Olive Oil
½ tspSea Salt and Freshly Ground Black Pepper
Garlic Tahini Sauce
1/2 cupSesame Seeds
2 clovesGarlic
2 tbspLemon Juice
1 1/2 tbspExtra Virgin Olive Oil
1/4 cupWater
1/4 tspSea Salt


  1. Add all tahini sauce ingredients into a food processor blend until smooth and creamy, pour into a container and set aside.
  2. Set half the avocado aside to use as a topping. Add the other half of the avocado with all remaining falafel ingredients into the food processor and pulse until combined but slightly chunky.
  3. Form mixture into 4 patties. Pan fry in a medium sauté pan over medium heat with 1 tsp oil, 4 minutes per side. Or place on a baking sheet lined with parchment and transfer into a 375 degree oven for 25 minutes.
  4. Put in a bun or pita, top with your favorite burger ingredients, the remaining avocado and the garlic tahini sauce.
