Cooked Chicken, shredded
2 Large
Whole Wheat Tortillas
1 cup
Oaxaca Cheese (or Mozzarella/Cheddar works too)

Avocado
1 cup
Tomato, roughly chopped
1/2 cup
Onion, finely choppedr
1/2 cup
Cilantro or Mint, finely chopped
1
Lime, juiced
2 tbsp
BBQ Sauce
2 tbsp
Olive Oil
To Taste
Sea Salt and Black Pepper
Directions
Cooking Directions
Safely dice up your avocado. Add it to a bowl with tomato, onion, cilantro and lime juice. Season to taste and set aside.
Add shredded chicken to a heated pan, over medium heat. Warm completely through, chicken should be steaming in the middle. Drizzle with bbq sauce and toss to coat.
Add your chicken on half of each tortilla. Cover with cheese and fold in half. Toast in a pan or on the bbq over medium heat. About 2 minutes per side until toasted and the cheese has melted. Serve with the fresh salsa.
