1 cupCooked Chicken, shredded
2 LargeWhole Wheat Tortillas
1 cupOaxaca Cheese (or Mozzarella/Cheddar works too)
1 cupTomato, roughly chopped
1/2 cupOnion, finely choppedr
1/2 cupCilantro or Mint, finely chopped
1Lime, juiced
2 tbspBBQ Sauce
2 tbspOlive Oil
To TasteSea Salt and Black Pepper


  1. Safely dice up your avocado. Add it to a bowl with tomato, onion, cilantro and lime juice. Season to taste and set aside.
  2. Add shredded chicken to a heated pan, over medium heat. Warm completely through, chicken should be steaming in the middle. Drizzle with bbq sauce and toss to coat.
  3. Add your chicken on half of each tortilla. Cover with cheese and fold in half. Toast in a pan or on the bbq over medium heat. About 2 minutes per side until toasted and the cheese has melted. Serve with the fresh salsa.
