Canned beans, drained & rinsed (any variety)
1 can
Artichokes, quartered
1
Large Tomato (or 2 medium tomatoes) halved
3 tbsp
Olive Oil
2 tbsp
Red Wine Vinegar
1 clove
Garlic
1/4 cup
Onion, finely chopped or grated
1/2 cup
Finely Chopped Herbs (choose your favourtie like basil or parsley or cilantro etc.)
1/2 tsd

Directions
Cooking Directions
Grate your tomatoes over a large bowl, with the cut side facing the grater. Applying a little bit of presure, you should be able to puree the tomatoe leaving only the skin behind.
Add your salt, olive oil, vinegar, garlic, onion and herbs to the pureed tomato. Mix well.
Add in your beans and artichokes and mix to dress. Adjust seasoning if needed to taste.
