3 cupsCanned beans, drained & rinsed (any variety)
1 canArtichokes, quartered
1Large Tomato (or 2 medium tomatoes) halved
3 tbspOlive Oil
2 tbspRed Wine Vinegar
1 cloveGarlic
1/4 cupOnion, finely chopped or grated
1/2 cupFinely Chopped Herbs (choose your favourtie like basil or parsley or cilantro etc.)
1/2 tsdSea Salt


  1. Grate your tomatoes over a large bowl, with the cut side facing the grater. Applying a little bit of presure, you should be able to puree the tomatoe leaving only the skin behind.
  2. Add your salt, olive oil, vinegar, garlic, onion and herbs to the pureed tomato. Mix well.
  3. Add in your beans and artichokes and mix to dress. Adjust seasoning if needed to taste.
