Chickpeas, rinsed and drained

Medium Beet, peeled and grated

Small Red Onion, roughly chopped

Garlic Cloves

Fresh Parsley or Cilantro

Dates, pitted
1 tbsp
Lime Zest
2 tbsp
All Purpose Flour
1 1/2 tbsp
Olive Oil
1/2 tsp
Sea Salt
Dressing
1 tbsp
Fresh Grated Tumeric or 1 tsp Ground Turmeric
2 tbsp
Lime Juice
1/2 cup
Plain Yogurt
1 tsp
Honey
Directions
Cooking Directions
Preheat the oven to 375 degrees F.
Add the dates, onion and garlic cloves to a food processor and pulse a few times to break down.
Add remaining falafel ingredients and pulse until well combined. Scrape down the sides.
Use a spoon or small ice cream scoop to portion about 1 tablespoon balls of the falafel mixture onto a baking sheet lined with parchment. Drizzle the tops with a little olive oil.
Bake for about 20 - 25 minutes. Allow to cool and serve or freeze.
Combine the dressing ingredients and serve with the falafel.
