Broccoli Head, florets removed from the stem
1 cup
Uncooked Quinoa, rinsed
1/4 cup
Red Onion, fine dice
1 tsp
Olive Oil
1/4 tsp
Sea Salt and Freshly Ground Black Pepper
Almond Orange Dressing
1
Orange, juice and zest
1 tbsp
Ginger, minced
1/4 cup
Toasted Almonds, roughly chopped
1/4 cup
Mint, finely chopped
2 tbsp
Rice Wine Vinegar or Regular White Vinegar
1 tbsp
Honey
2 tbsp
Olive Oil
1/2 tsp
Sea Salt and Freshly Ground Black Pepper
Directions
Cooking Directions
Add the quinoa and 2 cups of water or stock, into a medium pot over high heat. Once it begins to boil, reduce heat to love, cover with lid and cook for 12 to 15 minutes until all the water has been absorbed. Remove from heat, fluff with fork and set aside.
In a medium saute pan over medium high heat, add the oil. Add the broccoli florets. Take a large piece of parchment paper, run it under water, squeeze and then cover the broccoli with it. Cook 5 minutes.
Combine all ingredients for the dressing set aside.
Dress the quinoa with the toasted almond dressing and red onion. Plate.
Top with the cooked broccoli and goat cheese. Finish with a little more dressing.
