Ingredients

3 lbsChicken Carcass/ Wings/ or Pieces
1Large Onion, halved
2Large Carrots
2Celery Stalks
1 headGarlic, halved
2Thyme Sprigs & Bay Leaves
To TasteSea Salt
Breadcrumb Dumplings
1 cup
Bread Crumbs
1/2 cupParmesan Cheese
2Eggs
2 tbspFresh Chives or Parsley, finely chopped

Directions

  1. Add all chicken broth ingredients to a pot, add enough water to cover all the ingredients.
  2. Bring up to a boil and then reduce the heat to a low simmer. Cover and cook for about 3 hours. Strain and cool the broth.
  3. Once cooled, you can skim the fat off the top.
  4. For the breadcrumb dumplings. Add all ingredients to a bowl and mix well until it forms a dough. Roll into little balls. Cook in simmering broth until they float.

·         Some people find that eating and drinking at the same time makes them feel more nauseated. Try separating your solids and liquids.
