Ingredients

1/2 cupDark Chocolate Chips
1 cupFrozen Cherries (any fruit will work, fresh or frozen)
1/2 cupSeeds or Chopped Nuts
1/8 tspChili Powder (mild) or Cayenne (spicy-hot!)

Directions

  1. In a bowl, microwave chocolate chips twice for 45 seconds each until melted. Or you can melt chocolate over a pot of steaming water.
  2. Stir in the chili powder of your choice (optional). For a milder option, use cinnamon.
  3. Dip cherries into melted chocolate. Only a few at a time or the frozen cherries will cool the chocolate too fast.
  4. Place on a sheet of parchment paper.
  5. Sprinkle with chopped nuts or seeds while the chocolate is still warm.
  6. Place in your refrigerator or freezer to set.

Cooking Tips

  • Store up on frozen fruit and vegetables: Don't be turned off frozen fruit and vegetables. They can be just as tasty and nutritious as fresh ingredients, especially during the "off-season". The best part is that all the washing and preparation is already done for you. They should last up to a few months in the freezer and help to create quick meals when you don't have much energy.
  • Clean out the fridge recipes: You don't need to buy every ingredient when trying a new recipe. Use the recipe as more of a guide but try using ingredients that you already have in your fridge, pantry or freezer. Clean out the fridge soups are some of the best.
  • Get inspired: If you're tired it can be difficult to decide what to make for a meal or to figure out where to search for a recipe. Try picking up a few new cookbooks that appeal to you with recipes that are clear, not too complicated to prepare, and seem interesting to your tastes.
