1Whole Chicken
1 canCooked Black Beans, drained and rinsed
1Bell Pepper
2 clovesGarlic, minced
2 tbspLime juice
2 tbspChipole
2 tbspOlive Oil
To TasteSea Salt & Black Pepper


  1. Preheat the oven to 400 F.
  2. Combine chipole paste, olive oil, lime juice and minced garic.
  3. Pour the marinade over the chicken and store safely in the fridge for at least 60 minutes, up to oer night.
  4. Add all the vegetables in a baking dish, season with a little olive oil, salt and pepper. Top with your chicken.
  5. Bake for about 75 - 90 minutes, or until internal cooking temperature is at least 165F.
  6. Allow to cool and serve


  • Batch cooking is a great way to set yourself up for future meals in the fridge or freezer
  • Doing some prep in advance, storing some chopped vegetables in the fridge or freezer will help you create meals and get cooking much faster.
  • Remember to limit direct contact between a flame or hot grill and your animal proteins​. Also, using a marinade with citrus will help to protect meat from over charring.
