Ingredients

3 tbspChia Seeds
1 tspVanilla Extract
1 cupCoconut Milk
1 tbspPeanut Butter or any Nut Butter
1/2Banana Mashed
1 tbspMaple Syrup
1 tbspCocoa Powder (optional)

Directions

  1. Combine chia seeds, cinnamon, cocoa powder, and coconut milk in a mason jar.
  2. Stir in peanut butter, vanilla extract, mashed banana, cocoa powder (optional) and maple syrup. Shake well making sure everything is incorporated.
  3. Refrigerate for a minimum of 1 hour (or overnight).
  4. Top with desiccated coconut and blueberries or any favorite fruit.

  • ​Chia seeds are a natural thickener. The fibre in chia absorbs fluid and turns liquids into gels. This can be helpful if you need thickened fluids. Speak to your speech language pathologist to see what texture is right for you.
  • Coconut milk is rich in calories: 1 cup provides 550 calories, more than a bottle or can of a “plus calories” liquid nutrition supplement! Coconut milk gets most of its calories from fat but is low in protein, so it is not a meal replacement on its own. Pair it with sources of protein such as chia seeds and nut butter and you’ll have a balanced meal or snack.
  • Dry mouth (xerostomia) is a common side effect of radiation treatment to the head or neck. Choosing foods that are moist and soft can help. It’s also a good idea to have a beverage with your meals to act as a saliva substitute. Take a sip of your beverage while chewing and after each bite to keep your mouth and throat moist.
