Ingredients

1 large can (about 800ml)Whole Tomatoes
1 mediumCarrot, peeled and grated
1 cloveGarlic (optional)
2 cupsVegetable or Chicken Stock
1/2 cupSkim Milk Powder
3 tbspOlive Oil
To TasteSea Salt & Black Pepper
4 slicesCrusty Bread (something like a french stick or sourdough)
1/2 cupGruyere or Cheddar, grated

Directions

  1. In a medium soup pot, over medium heat, add olive oil.
  2. Lightly crush your garlic clove with the side of a knife. Add to the oil, cook until just lightly browned.
  3. Carefully add in your can of whole tomatoes, it may splatter. Gently crush the tomatoes with the back of a spoon.
  4. Add in your grated carrot, dried herbs and stock (or water). Let simmer for about 15 minutes.
  5. If you need to avoid garlic, you can remove the clove at this point. Carefully add everything to a blender with the skim milk powder and puree until smooth.
  6. For the crostini, toast in a pan, top with a little cheese and put a lid on the pan until cheese melts. Serve with soup.

  • ​Bowel obstruction is when your small or large bowel is partly or fully blocked. The bowel may become narrow and blocked (obstructed) due to cancer, scarring from surgery, radiation treatment, and/or pressure from fluid in the abdomen (belly). When blocked, poo cannot move through the bowel normally.
  • If your bowel becomes narrowed or blocked, you may need to make changes to the food you eat. A low fibr ediet may make it easier for stool to pass.
  • Stay hydrated. Getting enough fluid helps keep you hydrated and may help keep your poo soft. Drink at least 6 cups or 1.5 litres of fluid per day. Fluids are any liquids that do not have alcohol in them. 
  • Chew your food well. The smaller your food is when it reaches your bowel, the easier it is to digest. Eating slowly may make it easier to chew your food well.
