Ingredients

¾ cupDark Chocolate (70%)
¼ cupCashews, toasted
¾ cupYogurt
1 cupBlueberries
1 cupSpinach
1 tspLime Juice
1/4 cupWater

Directions

  1. Lightly wet a piece of parchment paper, crunch it up and then unravel to line an 8 in. tart shell. Or you can line with plastic wrap.
  2. Melt chocolate in microwave or use a double boiler. Once melted, stir in cashews. Pour into prepared shell and spread to cover the bottom.
  3. Add yogurt, blueberries, spinach, lime juice and about a ¼ cup of water, into a blender. Blend until smooth. Pour over the chocolate.
  4. Freeze the tart until hardened, about 2 hours. Allow to sit at room temperature about 5 minutes before cutting into pieces and serving. 

Nutrition

·         Low blood counts may occur as a side effect of your cancer treatment. Although a special diet cannot prevent this side effect from occurring, it is important to give your body the nutrients it needs to speed your recovery.

 

·         Iron from animal food such as meat, fish and poultry is better absorbed than iron from plant food sources. To improve absorption of iron from these plant foods, include A vitamin C-rich food, like orange, red pepper or tomato

 

·         Food safety is important during and after cancer treatments. The immune system is often weakened by cancer treatments making the body more susceptible to foodborne illnesses.
