Red Cabbage, shredded
1
Pomegranate, (about ¾ cup of pomegranate arials)
1/4 cup
Toasted Walnuts, roughly chopped

Dates, pitted and roughly chopped
¼ cup
Manchego Cheese or other sharp cheese, grated
½ cup
Parsley, roughly chopped
3 tbsp
Lime or Orange juice
1 tbsp
Vinegar (I prefer Sherry or Cider, any will work)
2 tbsp
Olive Oil
1/2 tsp
Sea Salt and Freshly Ground Black Pepper
Directions
Cooking Directions
Add cabbage to a large bowl, sprinkle with salt and vinegar. Using your hands, gently massage the shredded cabbage for a couple minutes. Let sit while you get your other ingredients ready. Drain off any liquid from the bowl.
Add pomegranate kernels, walnuts, dates, and parsley to the cabbage.
Mix lime juice, olive oil, salt and pepper and any extra pomegranate juice. Dress the salad and plate and top with lightly shaved or grated manchego.
