Egg Yolks
2 tbsp
Honey
1 tsp
Vanilla Extract
1/4 cup
Cream or Milk or Soy Beverage (any liquid will work)

Bananas, sliced into 1/2 inch rounds
1/2 tsp

Stick the banana slices in the freezer to chill until your custard is ready.
Combine yolks, honey, cream and vanilla in a heat safe bowl. Use a whisk to mix well.
Place the bowl over a small pot of simmering water. Whisk well by hand or use an electric hand mixer. Continue beating until the eggs are thick and frothy (custard consistency), about 6 minutes. To cook the eggs to a safe internal temperature, a food thermometer should read 160 degrees F
Allow custard to chill in the refridgerator for about 20 minutes to firm up.
Dip the banana slices into the custard to completely coat, (using a toothpick helps). Sprinkle with a little cinnamon. Stick all the coated banana pieces back into the freezer until ready to eat.
