Beet, peeled and grated
1 ½ cups
Frozen Blueberry

Lemon (myer or regular), seeded and roughly chopped

Directions
Cooking Directions
Cover dates with hot water to soften for 5 minutes.
Add dates with water and lemon in a food processor and pulse briefly to break up the dates.
Add raspberries and grated beets and blend until smooth.
If it’s too solid add more liquid. If it’s too loose, add more frozen berries.
Either serve immediately or pour into a shallow pan and into the freezer for 15 minutes to set. Run a spoon under hot water and then use to scoop out a serving.

Did someone say nutrition superstar? Beets win! Whether cooked, canned or raw, beets are a low calorie vegetable with a sweet taste. So, if you are trying to manage your weight, include beets in salads, sandwiches or in this delicious dessert.
Beets get their purple colour from a unique compound called betalains. These phytonutrients show antioxidant activity, and are currently being studied for their ability to reduce inflammation and to potentially lower the risk of heart disease and certain types of cancers.
Cooking time matters. Betalains are sensitive to heat so the longer beets are cooked the more these phytochemicals are lost. Enjoy steamed beets? Limit cooking time to 15 minutes of less. Like roasted beets? Keep cooking time to less than an hour. Maximize the nutritional value of beets by grating them raw to limit heat exposure.
