Ingredients

1Small Onion or Leeks, halved
2 tbspGinger, halved
3Eggs
1/2Lemon, peel and juice
1/2 cupParsley, roughly chopped
6 cupsVegetable or Chicken Broth/Stock
1/4 cupParmesan Cheese (optional), grated
To TasteSea Salt & Black Pepper

Directions

  1. Add broth in a medium pot with halved onion, ginger and lemon peel. Bring to a simmer and season to taste.
  2. In a small bowl, whisk eggs with parmesan cheese, salt and pepper.
  3. As your broth is simmering, whisk to spin the broth and then slowly pour in your egg mixture. It should clump up into little cooked pieces of egg.
  4. Add in your greens and lemon juice and stir through.
  5. Before serving, you can remove the ginger, lemon peel and onion.

Nutrition

·         Keep food smells to a minimum. Nausea (wanting to throw up) is a common side effect of cancer treatment. The smells of some foods may make your nausea worse.

 

·         Try bland foods with little seasoning or strong flavours such as crackers, plain biscuits, bread or toast.

 

·         Ginger is an old remedy for nausea. Have ginger biscuits, ginger ale, or ginger tea as an alternative to green or black tea.

 

·         If you are worried about feeling nauseous, join your friends and family later for dessert or tea. This may help you avoid some smells in and around the kitchen that may make you feel nauseated.
