Ingredients

2 cupsFrozen or Fresh Cauliflower pieces
1Small Onion, sliced
1 canBlack Beans​
1/4 cupBread Crumbs
1/2Lime juice and zest
1 tbspGinger, grated
2 tbspFresh Mint, finley chopped
1/2 tspSea Salt and Ground Black Pepper

Directions

  1. Place a large saute pan over medium high heat. Add a ½ tbsp. of olive oil.
  2. Add the bread crumbs. Stir and toast until lightly golden. About 2 minutes. Pour into a small dish.
  3. Add a tablespoon of olive oil in the same pan. Add the onion and cauliflower and cook for about 5 to 6 minutes or until tender and lightly browned. Season with salt and pepper.
  4. In a bowl, the black beans up a little with a fork. Season with ginger, mint, lime juice and zest. Add a tablespoon of olive oil and a pinch of salt and pepper. Mix well.
  5. Spread the black beans across a large plate and top with the cauliflower. Top cauliflower with toasted breadcrumbs.
  6. (optional) Add some sliced hot chili on top.

  • Blanching Tips:
  • Blanching stops the action of enzymes in vegetables that could cause them to dis-colour, toughen, and sometimes lose flavours 
  • Always blanch your ingredients in boiling water with the pot uncovered
  • Blanch in small batches so that you don't cool the water below boiling
  • Cool blanched ingredients immediately by placing them from the boiling water into a bowl of ice water.
  • Drain and dry vegetables well and then transfer on a flat tray into the freezer as soon as possible
