Frozen or Fresh Cauliflower pieces

Small Onion, sliced

Black Beans

Bread Crumbs

Lime juice and zest
1 tbsp
Ginger, grated
2 tbsp
Fresh Mint, finley chopped
1/2 tsp
Sea Salt and Ground Black Pepper
Directions
Cooking Directions
Place a large saute pan over medium high heat. Add a ½ tbsp. of olive oil.
Add the bread crumbs. Stir and toast until lightly golden. About 2 minutes. Pour into a small dish.
Add a tablespoon of olive oil in the same pan. Add the onion and cauliflower and cook for about 5 to 6 minutes or until tender and lightly browned. Season with salt and pepper.
In a bowl, the black beans up a little with a fork. Season with ginger, mint, lime juice and zest. Add a tablespoon of olive oil and a pinch of salt and pepper. Mix well.
Spread the black beans across a large plate and top with the cauliflower. Top cauliflower with toasted breadcrumbs.
(optional) Add some sliced hot chili on top.
