Ingredients

3 clovesGarlic
3 cupsFresh or Frozen Greens (kale, spinach, chard etc.)
1 cupParsley
1/2 cupSmall Shaped Pasta (i.e. ditalini, elbow)
1 canChickpeas, drained and rinsed
2 1/2 tbspOlive Oil
4 cupsBoiling Water
1/2Lemon
1/2 tspSea Salt and Ground Black Pepper

Directions

  1. In a soup pot over medium heat, add olive oil.
  2. Add crushed garlic and slowly cook until lightly browned.
  3. Add your greens and parsley and stir through.
  4. Cover with boiling water from your kettle.
  5. Use a hand blender and blend until smooth.
  6. Add pasta and chickpeas. Simmer until the pasta is cooked, about 15 minutes.
  7. Taste and season. Squeeze the juice from half a lemon and serve.
  8. (optional) Garnish with grated parmesan and chili flakes.
