Ingredients

1 cupRed Kidney Beans, drained and rinsed
1 ½ cupsSquash or Sweet Potato, rough dice
1 ½ cupsCeleriac, rough dice
2 cups/th> Black Kale (or use any kale), roughly chopped
1 cupOnion, rough dice
1 cupCarrot, rough dice
3 clovesGarlic, smashed
¼ cupParmesan Cheese
½ cupFarro or Barley
½ cupParsley, roughly chopped
8 cupsVegetable Stock
2 tbspOlive Oil
To TasteSea Salt

Directions

  1. Place a large pot over medium heat. Add your olive oil.
  2. Once hot, add your onion and garlic and cook until softened. About 5 minutes.
  3. Add your farro or barley and stir through. Cover with stock.
  4. Bring stock to a boil and then reduce heat to low and cover. Cook 20 minutes.
  5. Add are vegetables (squash, celeriac, carrots, beans) Cook another 15 minutes until they are tender. Add your kale and parsley and allow to simmer until your serve it.
  6. Season to taste and top with some parmesan.
