1-4 inch pieceKombu Seaweed
1/2 cupGinger, sliced
1Lemon, peel
8 cupsWater


  1. To prepare the stock, add 8 cups of cold water to a large pot. Add kombu, ginger, and lemon peel. Bring water to a boil. Just before it starts to boil, remove from heat and let the water steep for 30 minutes.
  2. Strain stock through a fine sieve. If turning into a miso soup, bring to a simmer and stir in miso.
