Chicken Thighs

Tomatoes, diced

Bell pepper, sliced

Onion, sliced
4 cloves
Garlic, sliced
1/2 cup
Frozen Corn

Black Beans, drained and rinsed

Lime, juice

Tortillas (whole wheat or regular)
Honey Chili Rub
2 tbsp
Tomato Paste
2 tbsp
Honey
1/2 tsp
Chili Flakes (optional)
3/4 tsp
Sea Salt
3/4 tsp
Ground Black Pepper
Directions
Cooking Directions
Preheat oven to 375°F (190°C).
In a small bowl mix tomato paste, honey, chili flakes, salt and black pepper.
Place chicken thighs into oven proof dish and spread the rub onto the chicken.
Add tomatoes, red pepper, onion, garlic, corn and beans to dish.
Cover dish with foil and bake for 1 ½ hours.
Shred chicken and stir in lime juice. Mix all ingredients together and serve on tortillas.
