Thin Rice Noodles (vermicelli)

Canola or Olive Oil

Directions
Cooking Directions
Add chicken to a pot, cover with cold water. Add half an onion for extra flavor. Bring to a boil, then reduce heat, cover, and simmer for 1 hour.
Remove the chicken, let cool, and then shred into pieces. Reserve cooking liquid.
In a large pan over medium heat, add oil. Add your garlic. Saute for about 2 minutes until garlic starts to brown, and then remove it from the pan.
Add your vegetable strips and saute for about 2 minutes. Add your shredded chicken and then soy sauce. Toss and set pan aside.
Soak your noodles in warm water, just until they will separate easily. Then transfer them to the chicken broth and simmer until just cooked.
Remove the noodles and add the pan with vegetables and chicken and warm through. Add a little of the chicken broth just enough to coat all the ingredients. Squeeze in the juice of a lime, toss and season to taste.
