Radishes, thinly sliced
3 cups
Any Lettuce or Cabbage, shredded
¼ cup
Fresh Mint or any other Fresh Herbs, finely chopped
2 tbsp
Lime Juice
1 tsp
Honey
1/2
Red Thai Chili (optional), thinly sliced
1 1/2 tbsp
Olive Oil
1/2 tsp
Sea Salt and Freshly Ground Black Pepper
Directions
Cooking Directions
Place lemon grass and lime juice in a small jar. Use a wooden spoon to crush to lemon grass slightly.
Add honey, chili, mint, olive oil and salt and pepper. Shake well.
Dress the radishes and lettuce and serve.

Radishes are part of the mustard family, and are rich in folate, Vitamin C and plant chemicals called anthocyanins. Folate is a B vitamin needed for healthy cell division, for cell growth and repair, and to make DNA. Low levels of folate in the blood are associated with a higher risk of colon cancer.
Both vitamin C and anthocyanins help boost the immune system. Anthocyanins are a type of antioxidant which may prevent heart disease. Anythocyanins may also help lower cholesterol and blood pressure.

. Wash your hands with soap and warm water for at least 20 seconds before handeling food. Also make sure to clean and sanitize any surfaces, dishes, utensils, pans and cooking equipment before and after you use them.
