2 - (8oz) filets
Cod (or any preferred fish)
1 cup
Roasted Peppers
1/2 cup
Parsley, roughly chopped
2 cloves
Garlic, crushed
2
Anchovy filets
1 tbsp
Red Wine Vinegar
1 tbsp
Olive Oil
1/4 cup
Manchego Cheese (optional)
1/2 cup
Breadcrumbs
1/2 tsp
Sea Salt

Cooking Directions
Preheat the oven to 425 F.
Place the garlic cloves in a food processor and pulse until broken up. Add all remaining ingredients (except the fish), in the food processor and pulse until combined but not completely smooth.
Place your cod filets in a baking dish, lined with parchment paper. Spread the pepper pesto generously over the fish. Lightly sprinkle some breadcrumbs over top.
(optional) If you have other diced vegetables, you can also add those to the baking dish.
Place in the oven and cook for about 20 to 25 minutes or until the fish flakes apart easily when pressed with a fork.
