Ingredients

6 (medium)Sweet Potatoes
1 cupSweet Onion, thinly sliced
1 cupQuinoa, cooked
Dressing Ingredients
1/2 cupFresh Dill, roughly chopped
2 tbspApple Cider Vinegar or White Vinegar
1 tbspDijon or Coarse Mustard
1/2 tspSea Salt and Black Pepper

Directions

  1. Preheat the oven to 375 F.
  2. Wash your sweet potatoes really well, but do not peel them. Place them on a baking tray and into the oven for 30 minutes.
  3. The sweet potatoes should be soft to the touch. Allow to cool. Roughly chop them up and put them into a large bowl.
  4. Mix all the yogurt dressing ingredients together, season to taste.
  5. Add the onions and quinoa to the bowl and add in your dressing. Gently toss everything together trying not to mash up the sweet potato too much. Top with some freshly chopped dill.

Nutrition

  • Constipation means that you are having bowel movements less often than normal and the stool is often dry and hard to pass. Constipation is common for people with cancer.
     
  • Cancer-related constipation can be caused by a variety of reasons that may include use of certain medications, not drinking enough fluids, and eating certain foods or not getting enough fibre. Talk to your doctor about the possibility of taking a laxative.
  • If you have mild constipation, eating more fibre may help. High fibre foods help make your stool softer and easier to pass.
  • Make sure to slowly add fibre to your diet so that you do not get bloated or gassy. Also, drink a lot of liquids while increasing your fibre intake. If you do not drink enough your constipation may get worse.
