Ingredients

2 lbs​Boneless & Skinless Chicken Breast or Thigh (or both)
1 large canPureed Tomatoes
2 cupsChicken or Veg Stock
1 largeOnion, sliced
1 wholeBell Pepper, sliced
3 clovesGarlic, crushed
2 cups
Frozen or Canned Beets
3 tbspOlive Oil
1 eachLime
Spices
1 tspChili Powder
1 tspSmoked Paprika
1 tspDried Oregano
1/2 tspCumin
1/2 tspCinnamon
1/2 tspSea Salt and Freshly Ground Black Pepper

Directions

  1. Mix all the spices together with 2 tbsp of olive oil. Rub all over your chicken.
  2. In an oven proof pan, over medium heat, add 1 tbsp of olive oil. Once oil begins to ripple, add chicken and sear about 2 minutes per side. Remove from pan. Add onions, peppers and garlic and use a wooden spoon to scrap and spices that stuck to the bottom (add a touch of water to help if needed).
  3. If you're using a slow cooker, set to low, add the chicken with vegetables and all remaining ingredients. Cook for about 5-6 minutes or until chicken easily shreds apart.
  4. If cooking in your oven (have it preheated at 350 degrees F), add chicken back to the pan with beets. Over with tomato puree and stock. Cover with a lid and bake in the oven for about 90 minutes. Remove the lid, raise heat to 400 F and cook another 10 minutes.
  5. Finish chili with a good squeeze of lime juice. Serve as is or in a tortilla.
