Ingredients

1 tbspFlax meal
3/4 cupAlmond milk, unsweetened (or any dairy/dairy-free beverage)
1/2 cupMaple syrup
1 1/2 cupPeaches, diced. Fresh or frozen,
2 cupChickpea flour (or use all-purpose flour)
1 cupAlmond flour
1 tspBaking soda
2 tspBaking powder
1/4 tspSea Salt
3/4 tspCinnamon, ground
1/2 tspStar anise, ground (optional)

Directions

  1. Preheat the oven to 350°F (175°C). Line muffin tin with large muffin cups and set aside.
  2. Blend flax meal, almond milk, maple syrup and 1 cup (250 mL) diced peaches in blender.
  3. Mix chickpea flour, almond flour, baking soda, baking powder, salt, cinnamon, and star anise together in a large bowl. Add remaining peaches and toss to coat.
  4. Pour wet ingredients into the dry and mix until just combined.
  5. Fill muffin cups and bake for 35-40 minutes or until inserted toothpick comes out clean.

Nutrition

The best part is that all the washing and preparation is already done for you. They should last up to a few months in the freezer and help to create quick meals when you don't have much energy.​
