Whole Wheat or AP Flour
1 cup
Carrot, grated
2 cups
Zucchini, grated
2
Eggs (or two flax eggs -> 2 tbsp ground flax + 6 tbsp water)
1/2 cup
Olive Oil
1/2 cup
Maple Syrup
1/2 cup
Walnuts
1 tsp
Baking Powder
1 tsp
Ground Cinnamon
1 tsp
Ground Ginger
1/4 tsp
Sea Salt

Cooking Directions
Preheat the oven to 350 degrees F
In a large bowl mix eggs, olive oil, cinnamon, ginger and maple syrup.
In another bowl, combine flour, baking powder and salt. Mix well.
Slowly mix in your dry ingredient into your wet ingredients bowl. Once just combined, stir in your grated carrots and zucchini and walnuts.
Pour into a loaf panned lined with parchment paper or into a muffin tray.
Bake for about 50-60 minutes or until a toothpick inserted comes out clean of any wet batter. Let cool completely, and then cut to serve. Freeze remaining portions.
