Split Peas (yellow or green)
1 cup
Leek or Onion, roughly chopped
1 cup
Fennel
6 cups
Vegetable or Chicken Stock
1 1/2 tbsp
Olive Oil
1 tbsp
Smoked Paprika
2 tbsp
Lemon Juice
1/2 tsp
Salt & Freshly Ground Black Pepper
Garnish
1 cup
Fresh or Frozen Green Peas (blanch 60 seconds if fresh and 3 minutes if frozen)
1/4 cup
Fresh Mint or Chive
1 tbsp
Extra Virgin Olive Oil

Directions
Cooking Directions
In a large soup pot over medium heat, add olive oil.
Add onion and fennel, sauté until soft. About 5 minutes.
Add smoked paprika and cook another 2 minutes.
Add split peas and cover with stock, bring to a boil, cover with lid and reduce heat to low. Simmer for 40 minutes.
Use a hand blender or carefully transfer to a stand blender and blend only partially.
Serve in bowls.
Combine peas, herbs, olive oil, lemon juice and zest. Add a little to each bowl of soup with a slice of goat cheese.
