Ingredients

3Chicken Thigh and/or Breast (skinless)
1/2 cupOnion, sliced
1 cupGarlic, cut in half
3/4 cupOlive Oil
2 tspSalt and Black Pepper
Sticky Peach BBQ Sauce
2 cupsPeaches, peeled and diced (fresh or frozen)
1 1/2 cupChicken or Vegetable stock
1 cupLime, juiced
1/4 cupHoney
1/4 cupVinegar
1 tbspFresh Thyme (or 1 tsp dried thyme)
1 tspSmoked Paprika
1 tspGarlic Powder
1/2 tspTurmeric
2 tbsp tspTomato Paste
1 tspSalt and Black Pepper

Directions

  1. Preheat oven to 350˚F (175˚C).
  2. Add all the ingredients for the Sticky Peach BBQ sauce in a blender and blend until smooth (if using frozen peaches, allow them to defrost). Add more honey for desired sweetness. Set aside.
  3. Season your chicken with salt and pepper. Drizzle olive oil and rub over the chicken so that its seasoned evenly.
  4. Preheat a large saute pan over medium high heat. (if you experience a metallic taste, then you can skip this step or add a piece of parchment to your pan).
  5. Sear the chicken for about 2 minutes per side to develop some nice colour and flavor.
  6. In a glass baking dish, add sliced onions and then your chicken. Pour in the BBQ sauce to almost cover. Place your limes and garlic head in cut side down.

  8. Place in the oven, uncovered, for 1 hour, or until the chicken shreds apart easily. With tongs, carefully remove the limes and squeeze over all the chicken.
  9. Serve over some whole-wheat couscous, brown rice, or mashed sweet potato.

​Coping with a Metallic Taste:

  • Having a metallic taste is one of the most common taste changes reported by patients. This typically goes away after treatment ends, but can sometimes last longer.
  • Many people find that red meat can have a metallic taste. Instead enjoy other high protein foods such as chicken or turkey, eggs, nuts, cheese, Greek yogurt or cottage cheese. If you have difficulty chewing or swallowing, make sure food is soft.
  • Balance a metallic taste by marinating chicken, fish or tofu in a sweet sauce like pineapple juice, or teriyaki or BBQ sauce.
  • Balance a metallic taste with something tart like lemons, lime, orange, vinegar or pickle, but avoid if you have a sour mouth or throat
  • Use plastic utensils or chopsticks instead of stainless steel utensils
