Cooking Directions
In a sauté pan over medium heat, add oil.
Add one piece of sweet potato and once it begins to sizzle evenly spread the remaining grated sweet potato over top.
Add onions, smoked paprika, salt and pepper. Cook for about 5 minutes until golden brown.
Make room in the pan to add your eggs and cook for a couple minutes. Cover with a lid and cook another minute.
Add the sweet potato and cooked eggs to your tortillas and top with some avocado and lime.
