Sweet Potatoes
1 cup
Any combination of these herbs (Parsley, Basil, Cilantro etc.), roughly chopped
2 tbsp
Fresh Oregano or Rosemary, finely chopped
1 tsp
Ground Cumin
1/2 tsp
Garlic Powder
1/2 tsp
Sea Salt and Black Pepper
3 tbsp
Red Wine Vinegar
1/2
Lime, juiced
6 tbsp
Olive Oil
Directions
Cooking Directions
Preheat the oven to 350 F.
Wash and scrub your sweet potatoes well. Place them on a roasting tray and into the oven for about 75 to 90 minutes, until softened
Combine all your chimichurri ingredients together and set aside.
Carefully peel the skins off of the sweet potato. Spoon your chimichurri dressing over top and serve.

Choose vegetables that your lower in insoluble fibre and be sure that they are well cooked and soft. Good vegetables to choose are sweet potato (skins removed), carrots, beets, bell pepper, squash and eggplant.
