Ingredients

4Sweet Potatoes
1 cupAny combination of these herbs (Parsley, Basil, Cilantro etc.), roughly chopped
2 tbspFresh Oregano or Rosemary, finely chopped
1 tspGround Cumin
1/2 tspGarlic Powder
1/2 tspSea Salt and Black Pepper
3 tbspRed Wine Vinegar
1/2Lime, juiced
6 tbspOlive Oil

Directions

  1. Preheat the oven to 350 F.
  2. Wash and scrub your sweet potatoes well. Place them on a roasting tray and into the oven for about 75 to 90 minutes, until softened
  3. Combine all your chimichurri ingredients together and set aside.
  4. Carefully peel the skins off of the sweet potato. Spoon your chimichurri dressing over top and serve.

Nutrition

  • Too much fibre in your diet can make your poo bigger which may increase your risk of bowel obstruction and make your partial bowel obstruction worse.
  • Choose vegetables that your lower in insoluble fibre and be sure that they are well cooked and soft. Good vegetables to choose are sweet potato (skins removed), carrots, beets, bell pepper, squash and eggplant.​
