Cooked Sweet Potato, peel removed (can be substituted with pumpkin puree)
1 cup
Pasteurized Liquid Egg White
2 tbsp
Ground Flax Seed
1/2 tsp
Cinnamon
2 tbsp
Maple Syrup

Cooking Directions
To cook the sweet potato, roast whole in the oven at 375 F for about 45 minutes or until soft.
Add all the ingredients in a blender and blend until smooth, about 20 seconds.
Heat up a non-stick skillet over medium heat, and melt a tablespoon of butter or add 1 tablespoon of olive oil. Pour a 1/4 cup of batter in the pan and gently swirl to spread it out.
Cook about 2 minutes per side until lightly golden. Repeat with remaining batter.
