Bell Pepper, sliced

Red Onion, thinly sliced

Fresh Mint or Cilantro

Toasted Cashews
Dressing:
1/4 cup
Green Onion, finely sliced
4 tbsp
Lime Juice
1 tsp
Honey
1 tbsp
Fish Sauce or Soy Sauce (optional)
1 tbsp
Red Chili (optional)
2 tbsp
Vegetable or Olive Oil
Directions
Cooking Directions
Combine all the raw vegetables in a large bowl.
Combine all the dressing ingredients in a small bowl or jar and mix well.
Toss all the vegetables in the dressing. Top with fresh mint and toasted cashews
(optional) Serve with some crispy tofu, canned tuna, or hard boiled egg for extra protein.
