Ingredients

Onion Jam Ingredients
2Large Red Onions, sliced
1 tbspOlive Oil
3 tbspRed Wine Vinegar or Balsamic Vinegar
2 tspFresh Thyme or 1 tsp dried
1/2 tspSea Salt
Crispy Toasts
8 thin slicesToasted Whole Grain Bread
8 tbspOnion Jam
1 cupArugula
1/2 cupRicotta (light or regular)

Directions

  1. In a large sauté pan over medium heat, add the oil. Add your sliced onions and salt, stir occasionally and cook until soft and caramelized. About 25 minutes.
  2. Add the vinegar and thyme and stir through, continue to cook until most of the liquid has been absorbed.
  3. Allow to cool and store in a sanitized jar. Refrigerate for up to a week.
  4. To serve, add on some toast bread with some ricotta and arugula.
