Ingredients

1 packageSilken Tofu
1/2 cupLime Juice
4 tbspHoney
1 tspVanilla extract
1 eachAvocado (ripe)
2 tspArrowroot Powder or 1 tbsp Cornstarch
Crust
3 tbspGround Flax
1 1/2 cupsCashews
1 cupFlaked Oats
2 tbspCoconut Oil
1 tspCinnamon

Directions

  1. Preheat the oven to 350 degrees F.
  2. In a food processor, pulse all the crust ingredients until it forms a crumbly mixture that holds its shape when pressed in your hand.
  3. Press the mixture into a pie pan, lined with parchment, until it is an even layer all around. Bake for about 20 minutes or until golden, set aside to cool.
  4. Add the avocado to a food processor and blend until smooth. Whisk the arrowroot powder into the lime juice and pour that in with remaining ingredients. Puree until very smooth.
  5. Pour mixture into cooled crust and set in the fridge for at least 2 hours to set.
  6. Remove the pie from the pan, slice and serve.
