Ingredients

1 cupFirm Tofu, diced
2 cupsMixed Mushrooms, roughly chopped
1/4 cupFresh Mint, thinly sliced
1 cloveGarlic, thinly sliced
1 tbspLemon Juice
2 tbspSunflower or Sesame Seeds, toasted
1 tbspWalnut or Olive Oil
1/2 tspSea Salt and Freshly Ground Black Pepper

Directions

  1. Preheat the oven to 340 degrees F.
  2. Cut a large piece of parchment paper, fold in half.
  3. Mix the tofu, mushrooms, garlic, oil, salt and pepper. Pile in the middle of half of your parchment. Fold to top half over and crimp the edges to create a seal.
  4. Transfer parchment packages on a baking sheet into the oven and cook for about 20 minutes.
  5. Carefully open the packages, top with fresh mint, lemon juice and toasted seeds.​

    1. ​Opening a window to maximize air flow.​​
    2. Eating foods cold or at room temperature, they do not smell as strong as hot foods.
    3. Drinking liquids through a straw to avoid their smell. 
    4. Asking a friend or family member to prepare foods. 
    5. Baking with pots or pans with a tight fitting lid. Or try cooking in a parchment paper package, or known in French cuisine as en papilotte.
