Ingredients

3 eachLarge Tomatoes, roughly cut
2 thick slicesWhole Grain or Sourdough Bread
1/2 cupPressed Cottage Cheese
1 tspDried Basil or Oregano
1 cloveGarlic
2 tbspOlive Oil

1/4 tspSea Salt​

Directions

  1. Toast your bread in a toaster or pan until golden brown and crispy.
  2. While your bread is still warm, rub a garlic clove all over the top until you get some good coverage with the garlic.
  3. Dress your tomatoes with salt, olive oil and dried basil/oregano, toss well. Set aside.
  4. Spread your cottage cheese over your bread, then top with your tomatoes and some of the tomato dressing. Enjoy!

  • ​​Tomato toast magic! Tomatoes are rich in the carotenoid - lycopene. Lycopene is a health protective plant compound that is found in most red coloured fruits and vegetables. We absorb much more lycopene from tomatoes, when the tomatoes are sliced, chopped, or cooked with a bit of olive oil. Enjoy some today!

Casein is slowly absorbed into the body which helps to promote muscle gain and protect against muscle loss. If you are not able to digest lactose, try the lactose-free varieties available at most grocery stores.
  • ​Have whole grains daily.  Whole grains have more nutrition than refined grains and adds much needed fibre to our diet. Just switching from white bread to whole grain bread adds 2 grams of fibre per slice. Simple switches, like this, get us closer to our minimum requirement of 25 grams of fibre daily.
