Soup Ingredients

Chicken or Vegetable Stock
1 cup
Carrots, medium dice
1 cup
Onion, medium dice
2 cups
Leafy Greens
1 can
Kidney Beans, drained and rinsed

Lemon
2 tbsp
Olive Oil
To Taste
Sea Salt and Freshly Ground Black Pepper

Cooking Directions
Preheat the oven to 400 F.
Mix all the meatball ingredients together well, and roll into smaller 1 inch sized meatballs. Place on a baking treat lined with parchment. Bake for about 6 minutes or until they start to brown. Remove from oven.
In a soup pot, over medium heat, add olive oil. Once the oil is hot, add the onion and carrot, stir and saute about 5 minutes.
Add the beans and stock. Bring to a simmer.
Add greens and meatballs, cook another 5 minutes. Finish with a good squeeze if lemon and season to taste. Serve with an extra grating of parmesan cheese.
